Microscopically, chicory is recognised by its open parenchyma and itspeculiar dotted ducts (Fig. 79, b). The amount of chicory may be foundfrom the specific gravity of a 10 per cent, infusion of the mixture, sincethe specific gravity of a 10 per cent, infusion of pure coffee is 1010, and of asimilar strength of pure chicory 1023.
