Thereare several different methods for determining the percentage ofsugar in the beet and the purity of the juice, but the followinggives a fair idea of the general practice. The sample beets having been cleaned, are cut into quarters,one-quarter of each beet being taken for the general general sample is placed in a grinding or shredding ma-chine, the beets are disintegrated to a fine pulp and thoroughlymixed. A specific amount of this fine pulp is then accuratelyweighed and placed in a copper pan or dish called a capsule.
