Elaidic acid. Computer model of a molecule of elaidic acid, a trans fatty acid. Atoms are represented as spheres and are colour-coded: carbon (blue), hydrogen (gold) and oxygen (red). This is the major trans fat found in hydrogenated vegetable oils. It is the trans isomer of oleic acid. Trans fatty acids raise levels of bad (LDL) cholesterol in the blood and their consumption may contribute to heart disease.
