Brewery vat, 19th century artwork. Vat being used to cool and ferment the liquid known as wort. The fermentation of wort to produce alcohol is one of the final stages in the production of beer. The fermentation occurs due to the addition of yeast. Pressure and temperature are monitored during this stage, and samples are taken for testing. Here, the brewer is inspecting the wort using a viewing port illuminated by a candle (upper right). This vat design was invented by the French chemist Louis Pasteur.
