With regard to the influences of seasons, or dif- ferent periods of the day, on the condition of milk, Eoedecker's researches' have shewn that the amount of fat in milli drawn from a cow at different times in the day varies considerably. The variation depends, in a great measure, on the manner of feeding. Thus the amount of fatty matter in the milk is far less in the morning than in the afternoon and evening. A similar result is obtained with casein. The sugar of milk is most abundant early in the morning, and least after midday. The quantity of salts remains very constant.
