Blue colored water moves up a capillary tube demonstrating capillary action caused by adhesion between the polar water molecules and the glass which is also polar. The demonstration also reveals the effects of cohesion - the attraction between water molecules that causes them to stick together. The blue is from food coloring added to enhance the visual of the water in the tube.
