Pink Purslane [Claytonia sibirica syn. Montia sibirica] is a salad plant found in western North America, northern Asia, and also an introduced plant in the UK. Confusingly this plant is sometimes referred to as Spring Beauty and Miner's Lettuce. However that name actually belongs to a specific plant, Montia / Claytonia perfoliata; a short hairless annual plant which is cultivated as a salad plant and is also found as a weed in the wild.
