UTAH No. 16 A very desirable green type. Plant tall, stout, and compact; blanches readily. Stems thick, solid, medium broad; of nutty flavor and fine quality with relatively few strings. White Plume An early variety. Leaves bright green, tinged with white; stalks medium. CHICORY Cichorium intybus Cicoria di Catalogna (Radichetta) Also known as Asparagus or Sprouting Chicory. An annual with leaves like dandelion, used for early greens. Large Rooted (Magdeburg) Dried roots are roasted and mixed with ground coffee. Root 12"-14" long, 2" in diameter at top; tapered. Witloof (French Endive) Used extensively for winter salads. The parsnip-shaped roots are reset for forc- ing in cold frame or greenhouse, and the blanched new leaf growth forms an attractive, compact head. 5"-7" long, having a pleasantly sharp flavor.
