After invasions from North Africa, the Moors left their influence through the food. Tasty peasant dishes of legumes and pulses are cooked in simple terracotta pots by the open wood fire. Flavoured with spices such as Saffron, the dishes are warming, rich in protein and a vegetarian delight.
