Vitamins and minerals are essential in small amounts for the body to function normally. The foods shown are good natural sources of vitamins and minerals. They are (from left) parsley (which contains vitamin C), carrots (vitamin A), spinach (iron), sweet potato (vitamin A), dried apricots and fennel (both containing potassium). However, the modern diet now relies much less on the natural sources of vitamins and minerals. Instead these nutrients are often manufactured in the laboratory and added to processed foods.
