RHODES BROWN, Strawberry Layer Cake.—Take a half-pound of butter, five eggs, six ounces offlour, one-quarter teaspoontul of mace, ahalf-pound of sugar, two ounces of corn-starch, one teaspoonf ul of vanilla, andone teaspoonf nl of baking powder. Beatthe batter to a cream, add the sugargradually, beating all the time; thenadd the yolks of the eggs, then the well-beaten whites, then the flour, cornstarchand baking powder; mix well and beat,adding the flavorings. Grease three jellytins, pour in the cake and bake in a mod-erately quick oven fifteen minutes. Whendone remove carefully from the pans andstand them on a towel for a few minutesto cool. Stem the strawberries and beatthe white of two eggs lightly, addingradually four tablespoonfuls of pow-ered sugar, and then beat vigorouslyJntil stiff enough to stand alone.
