It is ob-viously necessary to know something about thequality week by week, for it is no use buildingup a herd that yields enormous quantities ofpoor milk. In the past there has not been muchencouragement to farmers to produco richquality milk. So long as the Government standardof 3 per cent, butterfat was maintained, therewas not much object in striving to improve thequality beyond that, seeing that no extra priecould be obtained for richer quality, except,perhaps, in a few isolated cases for speciallyadvertised Jersey milk.
