Buffalo and ginger soup at the 3 Nagas restaurant in Luang Prabang. Little more than a ghost town ten years ago and given World Heritage status in 1995, Luang Prabang is in the midst of a renaissance, its plethora of traditional and colonial mansions, palaces and shop fronts restored and converted into restaurants, cafes and luxury hotels. The 3 Nagas restaurant is the first upscale restaurant in the country serving traditional lao cuisine. Most restaurants for tourists in Laos choose to emit less tantalising ingredients like buffalo skin and fermented fish sauce; proprietor Yannick Upravan putting these ingredients back in.
