Rice bran types. Assortment of five colour classes of rice bran: white, light brown, brown, red, and purple-black. Rice bran is a byproduct of the rice milling process, where brown rice is polished and its outer layers removed to produce white rice. The analysis looked at the phytochemicals and vitamin E concentrations in each class of rice. It was found that the darker red and purple rice brans have higher phenolic and flavonoid concentrations than the lighter brans. Vitamin E concentration differed among rice brans but was not associated with bran colour. The research was carried out by the Agricultural Research Service of the US Department of Agriculture.
