Kazakh women in traditional attire frying baursaki in a field over a wood fire, Saty, Kazakhstan

The people of Saty, Tian Shan Mountains, Kazakhstan were gathered for a yurt building ceremony, dressing in traditional attire and serving traditional foods. Yurts have been a distinctive dwelling of Central Asian nomads for centuries. They consist of expanding lattice wall-sections, a door-frame, bent roof poles and a crown, all covered with heavy felt made from the wool of sheep. They are designed to be able to be dismantled and moved from place to place on the backs of camels or yaks. In these images Kazakh women in traditional attire are frying baursaki (traditional fried dough) in a field over a wood fire. First you dig a deep wok-sized hole in the ground and place small pieces on wood in the hole. Place the wok over the hole and light the fire. Place cooking oil in the wok and when it is hot place small pieces of yeasted dough in the oil and fry until golden brown. Eat and enjoy with tea from the Russian samovar in the foreground!
