Anodised aluminium pressure cooker on a halogen hob.


As pressure is increased so boiling point is reduced. Thus food can be cooked at a lower temperature resulting in reduced cooking times. Anodising produces a protective oxide layer on the surface of the aluminium by electrolysis in an electrolytic bath
