Japan/Hyogo prefecture/Producing Japanese sake/ The polishing process greatly influences the final taste of the sake. The more the rice is polished, the whiter will be the rice powder left and the more it will reveal the starchy core of the rice. The sake will taste cleaner and fruitier, more aromatic with floral removes the outer part of rice, the proteins and oils of which would diminish the taste of sake. The polish ratio is determined by the how much of the inner part remains. If 30% of outer part of rice is removed, 70% remains, giving it a 70% polish ratio.
