Plant protein research. Technician using a spectrophotometer to analyse a yellow zein solution (right) and decolourized and deodorized zein solution (left). The yellow zein solution is represented by red on the screen, and the decolourized and deodorized zein is represented by green. Spectrophotometry allows the constituent chemical parts of samples to be quantified. Zein is a protein found in maize (corn, Zea mays) and is one of the best understood plant proteins. It is used for a wide variety of commercial products including coatings for paper cups, soft drink bottle-cap linings, and clothing fabric.
