Chick peas form an important part of traditional cuisine from the Apulia region of Italy.


A handful of chick peas before grinding into flour. Chickpeas are an important ingredient in Southern Italian cooking. A Moorish influence from past invasions from North Africa, they provide much needed nutrition in a largely vegetarian diet. Traditionally, Apulian cookery does not include much meat as the land does not support grazing and is largely limited to poultry, goats and sheep. Chickpeas are high in protein, low in fat and so are a healthy alternative.
