An examination of these results shows the percent-age of fat In the skim milk from the Holstein cows to-be double what it was in the case of the Jersey cows,as the average per cent, of fat left in the Holstein skimmilk was + per cent., while the average for theJersey skim milk was only .0385 + per cent. The percentage of loss of fat with the Jersey milkif found to be .55 + per cent, or .55 + of a pound lostin the skim milk for every 100 pounds of fat in thewhole milk.
