Image Caption: Vacuum pans used for condensing milk for soldiers and sailors during World War One. The pans have superheated coils through which steam passes, not coming into contact with the milk. The milk is sweetened in mixing tanks before entering the pans. Temperature required is approximately 120 degrees. Once moisture is removed, the condensed milk is canned.
