This is the traditional method for drying sweet chestnuts in Lunigiana, north Tuscany, Italy. Collected chestnuts are placed in drying houses aka gradili, which comprise 2 floors. Underneath, chestnut wood is burnt slowly to dry the chestnuts in the room above. Inevitably, this room is dark with smoke and steam from the drying nuts, and some of this is visible in the photos. The dried chestnuts are then ground into flour for assorted local dishes.
