At the Caroppo Bakery, Specchia Gallone, locally grown orange tomatoes are used in traditional Focaccia bread.

Small, locally grown, yellow tomatoes add a delicious taste to various traditional breads made at the Caroppo Bakery in Specchia Gallone. Caponata, for topping Focaccia, is a vegetable stew with peppers, zucchini and yellow tomatoes, a real taste of Summer. Tomatoes are a rich source of Vitamin C and belong to the Solanaceae plant family (as do aubergines, potatoes and capiscums). They form the base of many Mediterranean sauces and recipes. Part of the Nightshade family, there are many dietary myths surrounding tomatoes: they are bad for Arthritis or contribute to Osteoporosis and migraine headaches. Some Naturopaths suggest that people with osteoarthritis eliminate nightshades from their diet.
