Copper cookware fit for a king: antique cooking pots and pans above a tiled wall of ovens in the kitchen built in the 1400s by King John I of Portugal at the Palácio Nacional in Sintra, his retreat from the Lisbon summer heat. The kitchen, served by two huge conical chimneys, could cook enough food for the royal family and hundreds of courtiers and guests attending banquets and feasts.

The ovens lie directly below two massive conical chimney stacks, unique in Europe and 33 meters (108 feet) high, that vented the heat and smoke from the kitchen as carcasses of whole animals hunted in the Sintra hills by the king and his courtiers were roasted on lengthy spits. The kitchen and its landmark chimneys, now an international iconic symbol of Sintra and the National Palace, were built by Dom João I (King John I), who was born in 1357 and ruled Portugal from 1385 to 1433. With his English Queen consort, Philippa of Lancaster, John rebuilt and enlarged the original Moorish palace, creating new rooms that celebrated his royal House of Aviz and her House of Lancaster. The kitchen was built to serve the entire palace. In Portugal, as in other countries, banquets and feasts were one of the fundamental ways in which the monarch forged and maintained a union with his subjects and although they were only occasional, they ranked amongst the most important of court events.
