Smokehouse Chimneys. Bornholm, Denmark. The little village, Hasle, a few kilometer north of the main city on Bornholm, Rønne, is famous for its old herring smokehouses. The Hasle smokehouses was placed in one area, the Common. The first smokehouse in Hasle was built by two fishermen in 1893 and the 6th and last was added in 1931. From 1947 the smokehouses began to shut down and in 1971 all activities stopped. Today 5 of the 6 smokehouses does still exist. Two of the smokehouses resumed operation in 1990, but now as a "Smokehouse Museum", a living museum were tourists can learn about Herring smoking and - not at least - taste the product, smoked Herrings. The practice of smoking Herrings is first heart of in a customs book from 1672, which mention export of 16 barrels smoked Herrings. Throughout the 19th century export increased steadily. Until 1870 Herring smoking was done in the fishermens own private kitchen chimney. But from then on the art of smoking Herrings became small industries with specialized smoking houses in the small local fishing ports and fishing villages. Smoking Herrings became an important part of thr economy of Bornholm, as the products was sold to the rest of the country and abroad. In 1940 the smoking houses exported mio kilo from 135 smoking houses. But from then on production decreased, due to governmental demands and restictions as with regards to sanitation and workers safety (must be pretty unhealthy to work in the smoke). Today 60 is still there, but only a very few of the old ones are in operation. The Herrings are put on a rod and placed in the chimney on rows. Below cerrtain kind of woods - depending on the taste wanted, is glowing, which creates the smoke. If the woods catch fire, it is immediately extinguish, as the fish is not supposed to be grilled - but smoked. You can buy smoked Herrings in more or less all restaurants on Bornholm. These Herrings are smoked in modern systems, based upon sawdust, which is easier to control.
