Little is known, however, as towhat extent, if any, casein may exist in milkin a colloidal or suspended form. The effect ofvarying strengths of different salt solutions uponthe texture and water-holding capacity of thecurd becomes in consequence a factor of impor-tance in the manipulation of the curd for themanufacture of cheese.
