The floors must be of impervious materials and laidwith good drainage to the sewers. The walls should be plas-tered with cement mortar for at least four feet above thefloor line and given a hard, smooth surface which can bewashed down and kept clean. Light and ventilation should be provided for on asmany sides of the building as the arrangement of the plantwill permit and if ventilating flues are built in the walls,they will materially assist in carrying off the steam andodors. 70 TANK HOUSES The equipment should include vapor condensers forall tanks and driers, and these must be operated contin-uously during the hours of cooking and drying.
