The effect is that the inner leaves all become white, while the outer leaves are green. A board is sometimes laid flat on the Endive plant, to produce the same result. The plant must be handled only when dry, or the leaves will rot. Endive will endure a good deal of frost. Reliable varieties of Endive are Green Curled Winter
