Seitan, the oriental meat replacement made from washed wheat can be flavoured and shaped to make mock meat


Seitan is a meat replacement ingredient made from washing the starch out of wheat flour to reveal the gluten, which is elastic in nature. Mock chicken or duck is made from Seitan and used in Oriental dishes. It can absorb and take on any flavour you want. Use it in stir fries or braised in soups and stews with garlic, ginger or soy. Vegetarians use Seitan to replace meat and some avoid it completely because they claim it is too meat like.
