What a revolution this is going to be when it comes to communitycanning! These canning centres are undoubtedly the beginning of communitjcanning. An average of 500 quarts a day is a simple matter. Ten women cando 500 quarts of tomatoes a day, and the cost of coal and running expenses would 1919 WOMEXS 80 TilE liEruliT OF TllK No. 41 be nothing divided among the ten, and by buying the fruit and materials at onetime, they would be greatly reduced also. Each woman would have 50 quartsto take home, and there would be only one large kitchen to clean up, which wouldbe a simple matter for ten women. There is no comparison between each womandoing up her own little quarts in her kitchen and the community canning centrefor eflfieiency and lightened work. When we consider that in 11)17 we had butone canning centre, and in 1918 we had seven, I think we may watch this workwith interest.
