CHINESE CARBAGE OR WONG BOK—This de- licious vegetable comes from China and when its merits become more generally known, it will be as popular as Cabbage and Lettuce now are. The leaves, when fully grown, are crimped, of light green color and appear like smooth leaved mus- tard, but with much broader and heavier mid-ribs. The plant, as it matures, becomes more upright and forms heads much like Cos Lettuce. The inner leaves blanch an attractive light yellow or creamy white with very white mid-ribs. It is of distinc- tive flavor, very mild and pleasant. It is served as a salad like lettuce or cooked like asparagus. It is planted in this latitude after July 1st at the same time as turnips. Early planting runs quickly to seed in hot weather. Sow in drills 14 to 20 in. apart and thin two or three times, or, if grown for market, start in boxes and transplant like late cab- bage.
