Focaccia Dough waiting to be backed in a round aluminium baking tray


Focaccia is a traditional Italian bread based on pizza dough but more salty and contains yeast. The flavour of simple local ingredients like eternal tomatoes is intensified by the baking process. Once cooked the dough is able to absorb plenty of sauce or oil and can be used as fast food or to wipe the plate clean. Cookery courses are an important tourist attraction for travellers visiting Southern Italy as cookery from this region is world famous and thought to be very healthy.
