From these cattle many selections were made tocross over to the counties of York and Durham. Theprevailing color of the large Dutch cattle was black andwhite, beautifully contrasted. The cattle produced by these crosses a century ago wereknown by the name of Dutch. The cows selected forcrossing with the early imported Dutch bulls were generallylong horned, large boned, coarse animals, a fair type of which. 34 CATTLE AND THEIR DISEASES. was found in the old Holderness breed of Yorkshire—slowfeeders, strong in the shoulder, defective in the fore quarter,and not very profitable to the butcher, their meat being coarseand uninviting. Their milking qualities were good, surpass-ing those, probably, of the improved short horns. What-ever may be the truth with regard to these crosses, andhowever far they proved effective in creating or laying thefoundation of the modern improved short horns, the resultsof the efforts made in Yorkshire and some of the adjoiningcounties were never so satisfactory to the best judges asthose of the breeders along the Tees, who selected animalswith greater reference to fineness of bone and symmetry ofform, and the animals they bred soon took the lead andexcited great emulation in improvement.
