The Buddha's Hand citron (Citrus medica)

The Buddha's Hand (Citrus medica) is a citron variety growing as a shrub or small tree with the fruit segmented into finger-like segments. The fragrant fruit is often used in China and Japan as a perfume for rooms or clothing. The zest of the fruit is used in cooking and, because the inner white pith is not bitter, it is also possible to use the entire fruit sliced in salads.
