Lactobacillus paracasei bacteria (gray), coloured scanning electron micrograph (SEM). Lactobacillus bacteria are probiotic bacteria. They are useful for human and animal health as they produce bacteriocins (toxins that kill off competitive bacteria), which prevents infection by pathogenic bacterial strains. Here they are inactivating Streptococcus mutans bacteria (yellow), a cause of tooth decay. Lactobacillus bacteria are usually added to probacterial foods such as yoghurts and health bars, and have also been added to toothpastes. Magnification: x4,700 when printed 10 centimetres wide.
