Cut potato exposed to air. Two halves of a potato exposed to air for 10 minutes. The one on the right was squirted with lemon juice before being exposed to air for the same amount of time as the one on the left. This shows how the potato reacts with the oxygen (oxidises) in the air to go brown, and that the process can be prevented with the addition of the acid in lemon juice.
