Hummus and mutabbal, eggplant dip, at Amwaj restaurant at the Anantara Desert Islands on Sir Bani Yas, an island in the Persian Gulf, and once the private retreat of the United Arab Emirates’ founder, the former Sheikh Zayed Bin Sultan Al Nahyan.
