The Italian cappuccino is a hot drink made of espresso coffee with the addition of a delicate milk cream. This cream is obtained by whipping the milk in a steel jug by blowing steam and pouring it gently into the cup over the coffee. The extraction of the coffee and the whipping of the milk by steam is carried out with a machine called espresso coffee machine for bars, invented by the Italian entrepreneur Achille Gaggia in 1948. To obtain an excellent cappuccino, the skill of the barman, the quality of the coffee blend, the quality of the milk, the quality of the espresso bar machine and the grinder are of the utmost importance. The ideal cappuccino cup has a flared shape and a capacity of 140-200 ml. With appropriate movements it is possible, while pouring the whipped milk into the cup, to create artistic figures: this technique is called latteart.
