This is the Lettuce that is served at the best hotels and restaurants under the name of "Romaine ; It differs from ordinary Lettuce by the shape of the leaves, which are elongated, spoon-shaped and very crisp. It is grown in the same manner as Cabbage Lettuce, but does not make a solid head. The seed should be sown early in the spring, in good soil, and when plants have three leaves thin out to stand about 4 inches apart in the row, and when plants are of a sufficient size the leaves should be drawn together and tied, in order to blanch the inner ones.
