The Caroppo Bakery in Specchia Gallone, near Lecce, Southern Italy, plays host to a group of EU tourists from the Grundtvig project. We are treated to seasonal recipes including Chicory drizzled in a vinaigrette dressing with Virgin Olive Oil. Simple and delicious although the bitterness of chicory isn't to everybody's taste. Many recipes from the South of Italy are vegetarian. The land does not support the farming of large animals such as cows. Goats and chicken are more common and of course the sea is never far away so fish features large on the menu.
