E. coli research. Microbiologist spraying a bacteriophage mixture on fresh-cut iceberg lettuce. The bacteriophage mixture kills the Escherichia coli O157:H7 bacteria on the surface of the lettuce. Bacteriophages are viruses that infect bacteria. E. coli is commonly found in the gut of warm-blooded animals but some strains, such as 0157:H7, can cause serious food poisoning in humans. This research may help prevent the cross-contamination of food with this harmful bacteria.
