Pour boiling pickling solution into each packed jar of beets. Use a ladle or pyrex measuring cup to carefully fill each packed jar with the hot vinegar solution, allowing ½-inch headspace. The beets should be covered and there should still be 1/2 inch of airspace left in the top of each jar. Shown is a Weck canning jar which is made of thick glass to withstand boiling and sterilization. Glass lids are immune to rusting and can be used to process again and again. Since the lids are made of glass (as opposed to aluminum) there is no BPA coating that is found on metal canning jar lids.
