Cichorie, Ger. Chicoree, Fr. Archivoria de Cafe, Sp. Sow in April in drills half an inch deep, in good mellow soil, and cultivate like Carrots. Cut up and dry the roots, roast and grind like coffee. Mix about one-fourth of ground Chicory with the coffee before cooking. The plants can be blanched and used as a salad. Large Rooted. The Sweet or Sugar varieties beins liable to rot in cold or wet ground, should not be planted before May, or until the ground has become warm, and for a succession continue planting every two weeks, until the middle of July, in rich, well-manured ground, in hills 3 feet apart each way, covering about half an inch, and thin out to 3 plants to a hill, or plant in rows 4 feet apart, and to stand 8 inches apart in the rows.
