Velvet swimming crabs, Necora puber, that have been first boiled and then cooked in a wok with chicken broth, ginger, spring onions, chillies and garlic. The gills were removed before cooking and the shells then secured with string. Although not widely consumed in the United Kingdom, the crabs are exported from the UK to Europe, particularly Spain.
