A fine selection of blood-red Beet, extremely smooth, fine rich color and desirable shape, and makes a rapid growth, maturing very early. It is globe-shape, the color of flesh a rich blood-red and of most excellent quality, being sweet, tender and free from coarseness. The tops are quite small, making it a fine variety for forcing in hotbed, and it retains all the good qualities either when grown under glass or outside. The Swiss Chard, or Spinach Beet, is prepared for the table in the same manner as Spinach; sometimes, however, the mid- rib is prepared like Asparagus, with drawn butter. Seed planted early in the spring will quickly produce plants from which cut- tings may be made all summer, as you can cut right down to the ground, and new shoots will soon spring up and make a fast growth, while those plants which are allowed to grow on without any cutting will make large curly leaves, with thick, light- colored midribs, which are delicious when cooked and served like asparagus.
