After the plants have attained a height of five or six inches they should be set out in rows three feet a part, and 6 inches in the row. When twelve to fifteen inches high, the soil should be loosened by the use of the plow or hoe, and the plants be 'handled.'' This operation consists of draw- ing the stems upright with one hand and pressing the soil firmly against the plant with the other ; by this process the plant grows upright, and can be easily cultivated and blanched by drawing the soil close wp to the plant.
