Green pods of the soya bean plant Glycine max, one of the world's most important sources of oil and protein. The pods contain a number of globose seeds, which are used as food, or processed to give soya milk, curd and cheese. Soya is also a principal ingredient in flavouring sauces. It is a subtropical plant, although cultivation now extends from the tropics to 52 degrees north of the equator. Its origin and distribution historically has been eastern Asia, China and Japan. The requirements of growth are similar to those of maize and the greatest development in the 20th century has been in the American corn belt.
