Hand made Orecchiette Tricolore pasta with rustic tomato sauce, topped with Parmesan cheese and a sprig of basil is a traditional Italian recipe from the Apulia region of southern Italy. The ingredients are all sourced locally. Here a local chef tears up basil leaves to scatter on top as a garnish. Pasta from this area is not made with eggs, just durum wheat flour and water.
