Such selected species are then subjected to cultivation forthe purpose of obtaining their matured spores in the production ofdiastatic substances. For this purpose suitable materials, such asrice, hominy, ground corn, or wheat bran, are thoroughly steamedso as to sterilize the mass, as well as to gelatinize the starch, and the. Fig. I.—Taka-Moyashi. product is supplied with an artificial fertilizer to give the plant thesufficient amount of nutriment for its complete maturity. On tothis mass selected culture is sown, after which it is put into an incu-bator of proper temperature and humidity. Inside of twenty-fourhours the fungus growth will become visible, and at the end of sixor seven days the growth will reach its maturity, presenting a rich,velvety appearance of color, varying from reddish to dark green, ^!} Diastaiic Fungi. 139 according to the species of plant used. This pro(]uct is carefullydried and preserved. The matured spores of the plant may be sepa-rated from the mass by shaking, or sifting, and then can be pre-served indefinitely.
