I am frequently asked in court how it is possible for adealer to know anything about the quality of the milk, whichhe may have for sale, without going to the expense of ananalysis of each days supply. While it would, of course,be impossible to obtain a knowledge of the exact propartionsof solids and water each day without considerable expenseand loss of time, it is easy, after a little practice with thenecessary instruments, to obtain a very good idea of thequality of milk at no greater expense than a few minutestime. The instruments required are a Lactometer or Lacto-densimeter (Fig. l),a Thermometer, and a Feser Lacto-scope (Fig. 2)..
